Lemon - Curd

Lemon curd is so English - and yes - so delicious ! Some people call it sunshine in a jar:)That bright yellow curd can be used in many ways - simplest way is on a buttered toast (my favorite), it makes a delicious filling for cakes and cookies and I love it on waffles....

All you need is 
2 lemons ( juice and the zest ) 
70gr butter
2 eggs
125gr sugar

Put in a bowl sugar, butter, lemon zest and the juice and let it melt together over a water bath. Then whisk the eggs, keep on whisking until the mix thickens:-) Let it cool in the fridge.
