I had a friend over for wine, cheese and genuinely good conversation yesterday evening and had some leftover baguette, cherry tomatoes and buffalo mozzarella in the fridge this morning. I cut the bread in cubes, drizzled olive oil and salt over and baked in the oven until golden brown. Cut the tomatoes and mozzarella into small pieces. Two handfuls of spinach tossed over and added a little dressing made of olive oil, balsamic vinegar and red pesto. Can be enjoyed alone or as a side dish. Easy and delish :)
