The best ever blueberry muffins...
After trying out Gwyneth´s Paltrow healthier version of blueberry muffins in her book "my father´s daughter", I just had to try out her "unhealthy" version . They where so easy to make and tasted so so good!!!
Best ever blueberry muffins
8 tablespoons unsalted butter, melted and cooled
2 large eggs
1/2 cup milk
2 cups flour
3/4 cup plus 1 teaspoon sugar
2 teaspoons baking powder
1/2 teaspoon fine salt
2 1/2 cup fresh blueberries
Preheat oven to 190°C. Line a 12-cup muffin tin with papers.
Whisk the butter, eggs, and milk together in a bowl, In another bowl, whisk together the flour, the 3/4 cup sugar, baking powder and salt. Stir the wet ingredients into the dry ingredients and fold in the blueberries. Divide among the muffin cups and sprinkle the muffins with the remaining teaspoon of sugar. Bake until a toothpick tests clean and the muffins are golden brown, 25-30 min. Best to eat these warm
