Frida Sophia's spinach pie

My friend Frida Sophia is a gourmet chef with real passion for vegetarian cooking

Frida Sophia has three published cookbooks on her resumé and  has received GOURMAND WORLD COOKBOOK AWARD for two of them! She studied raw food in Puerto Rico and she learned the art of Arabian cooking in Jordan. If you are in Iceland be sure to check out her cooking class:) Frida Shopia is  famous for her pies so I asked her to share with us the recipe for her spinach pie, which she happily did:) 

Frida Sophia's spinach pie

180g filtered spelt
200g butter
3 table-spoons cold water 
1/2 tee-spoon herb salt

Pie filling
1 leek finely chopped 
500gr  spinach chopped 
little bit of garlic finely chopped
5 eggs
100g cream cheese
200g cottage cheese
1 tee-spoon herb salt
1 tee-spoon dry basil
2 dl cooking-cream 
1 table-spoon sweet chili sauce 

preheat the oven to 170°
put everything in a mixing bowl and knead it until it has become smooth and crack-free:) Store in the refrigerator for 1-2 hours
Flatten the dough out then push it into 24 cm spring form
Sprinkle the leek on the dough then the spinach.
Put the eggs, cream cheese, cottage cheese and the herbs in a mixer then put it over the spinach.
Bake the pie for 50-60 minutes 

Served with crème fraîche with a little garlic and oregano and green salad :)
