As I have mentioned before am I a big fan of Katie Quinn Davies. Kate is one of the best food photographer / stylist out there and she writes her own recipes to. Check out her blog here Her latest book What Katie ate at the weekend came out last month.I can't wait to get my hands on it!

In the kitchen - Frank Sinatra meatballs





Ítalskur matur er í miklu uppáhaldi hjá okkur fjölskyldunni. Að þessu sinni vorum við 3 í mat og urðu Frank Sinatra kjötbollur fyrir valinu. Uppskriftin af þessum kjötbollum kemur frá Dolly Sinatra (mömmu Franks), sagan segir að þær hafi verið í miklu uppáhaldi hjá honum. Kjötbollur, pasta, marínarasósa og vel af Parmesan og þú ert komin með fullkomna máltið fyrir fjölskylduna. 

Frank Sinatra kjötbollur

500 gr. nautahakk (má blanda saman nauta og svína)
2 egg
2 lúkur af Parmesanosti
1 dl. af brauðrasp
salt 
pipar
2-3 marin hvítlauksrif

Blandið öllu vel saman í skál. Mótið litlar bollur og steikið á pönnu uppúr ólífuolíu (nokkrar í einu).


Marínarasósa

1/2 bolli olífuolía
1 dós tómatar
1 laukur
3 hvítlausrif
1 msk. tómatpurré
salt
pipar
1 tsk. oregano
1 tsk. basli
Ég bætti við slettu af rauðvínsediki og smá balsamikediki 

Hitið ólífuolíu í potti og mýkið laukinn við miðlungshita í nokkrar mínútur bætið þá mörðum hvílauknum útá í 1 -2 mínútur. Bætið síðan afgangnum út í pottinn og látið malla við vægan hita í minnst 30 mínútur.

Berið fram pasta og Parmesanosti


We love Italian food in our family. This time it was dinner for 3, and we made Frank Sinatra meatballs. The recipe comes from Frank's mother Dolly Sinatra. The story is that these meatballs were Frank's favorite. Meatballs, marinara sauce, pasta and Parmesan and you have the perfect family dinner. 

Frank Sinatra meatballs


500 gr. ground beef (or mixed beef and pork) 
2 eggs 
2 two handfuls of Parmesan 
good handful of breadcrumbs
salt 
pepper 
2-3 minced garlic gloves 


Mix all the ingredients together in a bowl. Shape into balls, and then brown on all sides in olive oil over medium heat. 


    Marinara sauce

    1/2 cup olive oil
    1 small onion, finely chopped
    3 garlic cloves, finely chopped
    1 can crushed tomatoes 
    1 tablespoon tomato puree
    1 teaspoon oregano
    1 teaspoon dried basil
    Salt and pepper to taste
  • Heat the oil in a large saucepan over medium-high heat. Add the onion and cook, for about 5 minutes. Add the garlic and cook, for about 2 minutes. Stir  the tomatoes, and puree. Heat to simmering, and cook on low heat at least for 30 minuets.
  • Serve it with pasta and Parmesan.
  • Godere!

In the kitchen - Doctor's orders



Það er ekkert leyndarmál að við hjónin horfum mikið á matreiðsluþætti saman (rómó). Nýi uppáhalds er Læknirinn í eldhúsinu á Skjá einum. Ég hef fylgst með blogginu hans lengi og hef verið mjög hrifin, hann er með alvöru ástríðu fyrir mat og sýnir snilldar takta á köflum :-)  Spaghetti var í aðalhlutverki í  þættinum hjá honum um daginn þar sem hann sýndi nokkra rétti hvern öðrum girnilegri.. en þessi stóð uppúr: Besti pastarétturinn fyrir sumarið, glóðasteiktir tómatar, hvítlaukur og basil einfaldur og alveg ótrúlega góður!

It is no secret that my husband and I love to watch cooking shows. Our new favorite show is the Doctor in the kitchen. I have been following  his blog for a long time now and really like it. He has a real passion for cooking and is very good at it :-) Spaghetti had leading role in one of the episodes, this dish stood out: The best pasta dish for the summer, grilled tomatoes, garlic and basil simple and so tasty!

In the kitchen - Hungarian goulash soup






Þó svo að það sé vor í loftinu var þessi vetralega súpa fyrir valinu í helgarmatinn. Ekta gamaldags ungversk gúllassúpa sem verður bara betri með aldrinum:-)

800gr. nautagúllas
2 laukar
 2 - 3 gulrætur
1 L nautaskjötssoð
 sveppir
2 rauðar paprikur
1 lítil dós tómatpúrra
1 dós  tómatar
4 hvítlauksrif
4 msk balsamic edik
2 msk paprikuduft
1 msk mable sýróp
salt, pipar, estragón og timían
1 ferna matreiðslurjómi
Sýrður rjómi til að bera fram með súpunni.


Brúnið kjötið í litlum skömmtum í olíu. Setjið til hliðar. Steikið laukinn þar til hann verður glær, bætið sveppum, papriku, gulrótum, hvítlauk og kartöflunni saman við og brúnið. Setjið kjötið aftur í pottinn og hellið balsamic edikinu yfir síðan kjötsoðinu ásamt tómapúrru og tómötum og mable sýrópinu.  Kryddið og sjóðið í minnst 2 tíma. Bætið rjómanum saman við þegar 10 - 15 mínútur eru eftir.  Borið fram með sýrðum rjóma og góðu brauði. 


Even though the spring is in the air I chose to make this winter soup this weekend. Typical Hungarian goulash soup, that just gets better with age:-)


800g. cubed beef
2 onions 
2-3 carrots 
1 L beef stock
 mushrooms 
2 red peppers 
1 small can tomato puré
1 can tomatoes 
4 garlic cloves 
4 tablespoons balsamic vinegar 
2 tablespoons paprika 
1 tbsp syrup Mable 
salt, pepper, estragon and thyme 
Cream  
Sour cream to serve with the soup.




Brown the meat in small portions in a pot with oil. Set aside. Fry the onion until it becomes transparent, add mushrooms, peppers, carrots, garlic and potatoes together and brown. Put the meat back in the pot and pour balsamic vinegar over the meat then tomato puré, beef broth and tomatoes and Mable syrup. Season and cook for at least 2 hours. Add the cream when 10-15 minutes are left. Served with sour cream and good bread.

Maturinn er ferskur, oftast franskur og alltaf girnilegur. You get a glimpse of Mimi's life, where idyllic countryside and cosmopolitan sophistication melt so perfectly together, you just can't help but let out a little sigh of admiration.  I am looking forward to see what she does in the future :-)
